Veg out!

Today was a brutal day! Just brutal!!! If it could go wrong...it did! Traffic jam on the way to work...harassing e-mails from a psycho ex...new student with extended family members in tow in the middle of an important lesson...meetings after work....deadlines....need I go on??? OK>>> Well it's not that bad! Hey..I just read that and it sounds like just a normal day!??!!
SO maybe I was being dramatic, but the point is I felt very stressed today and wanted to just come home and veg out!
So I did!!!!

Vegetable soup with grilled cheese
(one of my boys favs)
Hit the GS for a few items. Guess I am back to my old habits of daily shopping! Damn it!

2 baking potatoes
2 carrots
2 zucchini
2 ribs celery
2 yellow squash
2 cloves garlic
1 red bell
5 cups chicken broth/stock (homemade would be best but let's not get crazy!)
2 bay leaves
s&p
evoo
2 tbsp butter

I just noticed a little 2222 trend! Cute!


So I saute the celery and garlic in evoo and butter and add the bay leaves.
Then chop and add the potatoes and carrots. I add s&p at EACH step. I think it makes a big difference rather than trying to add it all at the end.

YUM YUM!!!

Then chop and add the zucchini and yellow squash, and the red bell pepper. I try to chop it all around the same size just cuz I like that! :)

We are officially sideways...

Then add the broth or stock, whatevs you are using. Tonight it is the "broth in a box" and it tastes good! You can let it simmer as long as you like. Sauting the veg makes it cook fast! I just let it simmer while I make the sandwiches...and oh yeh.. write the blog!

I just use really good bakery bread and a couple of different kinds of cheese to make a super delicious grilled cheese to go with it! My boys love this dinner!!! Which is great because it is good for them and I love cooking it!
So at the end of a long, stressful, crappy, grueling, ..ok...ok... day, This is how I VEG OUT!!!
